Definitely the Wipeout series. Although my PSP has just decided that I didn't need my Wipeout Pulse savefile and its gazillion gold medals anymore and corrupted it. D:

Gran Turismo 5 is what I'm playing now.

I also have Need for Speed: Shift when I want a bit of an easier game dynamic.

 

EDIT: Gran Turismo 6 is the one I'm working on now, with NFS: Shift 2 if I need something easier.

(Haven't really be playing the racing games much lately, though. Haven't been in the right mindset.)
