I can't think of an in-game explanation that would make sick adult dragons look like an egg of a different breed. They are only supposed to become lethargic, not magically mutated into something completely different.

(Although it would be funny if that happened to more breeds. ... Well, funny and very confusing. )

That's right, it's to make the newly bred holiday breeds unbreedable till the next season. It's the same with Christmas und Valentine's.
