Posted December 19, 2014 Well, when it is dinner time tonight I'm going to simmer a left over rotisserie chicken for about 45 minutes, get all the meat off, let the broth cool, skim off most of the fat, cook rice in the broth and have chicken and rice. Easy, but delicious and a great way to get two meals out of one chicken. Share this post Link to post
