Hm, I'm going with #2, since 1 can't be a lie if the others are true, and 3 seems very specific. Who knows, though.

 

1) I don't like vegetables.

2) I am easily startled.

3) I drink tea regularly.

 

Edit: The lie is actually #1; I like a lot of veggies (I'm also VERY easily startled and can't stand loud noises, and I can't drink coffee since it's too harsh on my stomach so I drink black tea instead.)
